Fruited Sweet Roll

 

So I was watching the Cooking Channel the other day and it had one of those shows where they visit restaurants/bakeries/fast food joints etc. Anyway, they had a segment on a particular bakery someplace back east, and I wish I could remember the name. Oh well, that’s how it goes for me, in my ear and out the other…I really need to purge the overloaded brain that I have so I can store new data. Anybody want to invent something like that for me?

Well, since I have to wait for that invention to come along, the one thing I did remember was that this bakery had a delectable looking sweet roll/danish. Of course they don’t  give you the recipe, but they mention some of the ingredient…and here’s my version of it, adapted to my bread machine of course. I also thought it might come in handy around the holiday season.

Fruited Sweet Roll (adapted for a bread machine)

Add the following ingredients first:

1 cup warm water
1 cup milk, warmed
1 egg
1 cup honey
1/2 cup melted butter
2 tsp salt

Then add:

1/2 cup sugar
6 – 6 1/2 cups flour
2 pks yeast or 4 1/2 tsp yeast

Turn your bread machine on to the dough setting and watch to make sure the dough mixes properly adding small amounts of water or flour as needed.

Once completed with the dough setting. Dump out onto a floured surface and roll into a ball. Divide in half and then divide in half again. With each quarter piece, divide into 3-4 sections each till you have about 24-36 pieces.

Roll each of those dough pieces into small balls and place on a parchment lined cookie sheet, about 12 per sheet. Let rise till doubled in size.

While dough is rising create your fruit mixture. Dice up approximately 3-4 cups of fresh fruit. I used strawberries, but peaches, or blueberries or raspberries would work. Set aside

Next make streusel topping:

1/4 cup butter, melted
1/3 cup brown sugar
1/3 cup white sugar
1 tsp cinnamon
1/2 c flour

Mix together and then set aside.

You’ll need homemade or store bought jam (flavor will depend on which fruit you chose). About 2 cups.

Once dough has doubled in size, flatten each ball and wash with milk. Sprinkle with Sugar in the Raw (it’s a chunkier sugar with larger sugar crystals). Spread small amount of jam over the flattened dough. Place diced fruit pieces onto and then sprinkle with streusel.

Bake at 350 for about 20 minutes.

You can make a powdered sugar/milk glaze to drizzle on top. Serves about 24-36.
